Nut Milk Recipe
I recently decided to give up coffee for a bit and have been experimenting with coffee alternatives. This nut milk does the trick.
1 1/2 cup almonds (I find soaking the nuts overnight helps them to blend smoothly, but it certainly isn’t necessary)
1/2 cup of walnuts
1 Tablespoon of sesame seeds
2 Tablespoons of flax seeds
3 Tablespoons of maple syrup
1 Tablespoon of vanilla extract
dash of cinnamon
4 cups of water
Blend (in your vitamix or high speed blender) for 2 minutes. I love this thick and nutty, but strain with cheesecloth if you are looking for the creamy consistency of milk and discard the solids.
Swap out the maple syrup for stevia to cut out the sugar (you would only need a dropper-full of stevia in that case). We are blessed with lots of fresh maple syrup in our home from my in laws farm. Maple Syrup is rich in trace minerals not to mention it’s irresistible taste.
